About Our Chocolate School

Ecole Chocolat's goal is to make you an expert in working with chocolate and understanding the challenges of working with cannabis ingredients in your chocolate recipes. Since we opened registration for our first Professional Chocolatier Program in 2003 we have worked with students from all over the world and with different levels of experience in chocolate work. Are you a novice? Our program will give you a basis from which you can move on to more complex techniques and recipes. Are you experienced in working with chocolate? Our program will give you confidence in what you do know and fill in the gaps, especially around incorporating cannabis ingredients into your recipes.

Chocolate Programs

Tempering Chocolate

This program is only the latest in a carefully curated group of programs, starting with our Professional Chocolatier Program in 2003. We focus ONLY on chocolate work and recipes– nothing else in an intensive learning experience. Each program includes an online tutor or leader who is knowledgeable and experienced. The curriculum is updated continuously so we keep our students current and knowledgeable about the latest techniques and recipes. We also stay very connected to our graduates who continue to work with each other in our Graduate Centre.

We were founding members of the following fine chocolate organizations. And we remain very active and involved: Fine Chocolate Industry Association (FCIA), Heirloom Cacao Preservation (HCP), Hawaii Chocolate and Cacao Association and as a Grand Jury Judge and Advisor for the International Chocolate Awards.
